White Bean, Rice, and Potato Stew

Hoping to make this soon -

1 cup dried white beans
1 quart water
1 medium-large onion, chopped
6 large garlic cloves, chopped
1 bay leaf
3 tablespoons olive oil
3/4 pound boiling potatoes, peeled and diced
2 1/4 teaspoons salt
1/2 cup medium-grain rice
1 teaspoon sweet paprika

1. Place the beans in a large saucepan and add three cups of the water, the onion, garlic, bay leaf, and olive oil. Bring to a boil and then reduce the heat to low. Cover and simmer for an hour.

2. Add the potatoes and salt and cook until the potatoes are almost tender, about 20 minutes. Add the rice and paprika, bring to a boil, and return the heat to low. Cover and cook until the rice is tender, about 15 minutes. Add the remaining one cup of water to make the stew soupy, if necessary.

3. Remove the stew from heat and let stand, uncovered, for 5 minutes before serving.
