    "Chicken Stuff"

    Blue Bonnet - Light Butter, 1.5 tbsp
    Mccormick Perfect Pinch - Italian Salt Ree Seasoning No Msg, 1/8 tsp
    Best Choice - Fancy Cut Green Beans, 1 cup
    Best Choice - Boneless Skinless Chicken Breast With Rib Meat, 5 oz. (112g)


    Put green beans and chicken in baking dish.
    Season with the above seasoning.
    Pour melted butter over top.
    Add enough water to have a very tiny puddle in the bottom.
    Bake at 350 covered with foil for 45 minutes.

    Creates 1 serving at 250 calories!

    I put it on toast, or in oatmeal. It is only roughly 40 calories per tablespoon. Love the stuff, and I'll probably make a trip to the Farmer's Market once a month in order to keep this in my fridge! I really need to learn canning so I can do it in bulk.

    I have recently discovered the joys of juicing.

    Thus far my fave combo is apple, celery, ginger, watermelon and beetroot.

    I feel much better since I started having my morning juice

    Oh my gosh I made an awesome snack last night but it isn't calorie light. I had a ton of calories left and I was hungry.

    Toasted bagel thin
    1 tbsp peanut butter dived between halves
    I banana sliced and put on top
    Drizzled with Hershey's syrup
    Topped with redi whip

    I forgot I had the chocolate jiff or I would have used that instead of the regular peanut butter and syrup.


    I love Jennie o turkey burgers. I put them on a toasted light English muffin or sandwich thing with a little cheese.

    I made a great veggie soup the other day from a Biggest Loser cookbook. I will post it when I am at a computer.

    The bagel, peanut butter one was 353 cal

    The turkey burger is 370 (I used regular cheese and English muffin so you could totally make that less)

    The soup was 60 cal

    I had the best turkey sandwich yesterday at a friend's house.

    It was:
    Whole grain pita pocket
    Roasted garlic hummus
    2 slices deli turkey meat
    stuffed with lettuce, tomatoes, and cucumbers

    I'm not a veggie person so I thought it would be pretty boring and bland, but the hummus made it taste wonderful. It filled me up and was under 200 calories. I'm going to buy pita pockets and hummus today!

    I'm trying to eat more natural, so my snacks are mostly fruit and natural peanut butter or fruit and cheese. Sometimes I grab a granola bar if I'm on the go. My guilty pleasure is the archer farms sea-salt caramel and almond mini granola bars. They are only 70 calories and satisfy my sweet tooth.

    Here is a favorite salad of mine made out of brown rice and apples. I've gotten several people "addicted" to it. I usually skip the chicken and add a can of black beans and add more veggies. http://www.tasteofhome.com/Recipes/Brown-Rice-Salad-with-Grilled-Chicken.

    I am also addicted to Wasa Crisp 'n Light Crackers. I like them just about any way you can imagine except plain-cream cheese and cucumbers OR extra sharp cheddar cheese, avocado and tomato OR laughing cow cheese wedges.

    I love grated carrot salads-grate up half a pound carrots and pour vinaigrette over them (1 tablespoon lemon juice, 1/2 teaspoon Dijon mustard, 3 tablespoons olive oil, 1/4 teaspoon salt, a couple of grinds of black pepper). It can dress up a boring plate deliciously. It tastes better after it's been refrigerated at least an hour.

    As for baby spinach-yum! I stir it into soup, mix a handful (or 2) into breakfast shakes, put it in omelets, quiches and in salads. I also like it sauteed with garlic.

    I make home made chicken soup but omit the noodles. I like to put a small amount of fresh grated ginger in it. In the last few minutes of cooking I load it up with fresh spinach.

    I have been juicing too but idk how to count the calories for it...any suggestions?

    Chicken Tacos w/ homeade salsa

    For the meat I take chicken breast and dice it, cook in a dry pan and use low sodium taco seasoning

    In my ninja i use white onion, jalapeno pepper w/ some seeds for bite, lots of cilantro, garlic, and cumin. I add in 1 can no salt added tomatoes and pulse.

    Serve the taco meat on a bed of salad and use the salsa on top....sometimes I will add some light sour cream if I get it too spicy.

    This is great hot or cold. My 11 yr old has started requesting this now but I have to leave the pepper out for her.

    Lazy woman's baked dilled fish.

    1. Dump some frozen fish into baking pan
    2. Dump some juice from the dill pickle jar on the fish.
    3. Bake.

    Family loved it.
    I also do the same thing with low fat Italian salad dressing on either fish or chicken.
