grain free ideas?

I'm looking to create an easy list of totally grain free,soy-free, dairy-free ideas. I want to cut back on grains - especially processed chips & bread. There are so many suspicious things added to even the "organic" ones. I've noticed I can save a lot of calories by subbing veggies for grains and get waaaay more nutrients.

So far, I've tried spaghetti squash for pasta. I love it!
I've tried romaine lettuce for sandwich bread. It's so-so. Kind of falls apart.
I tried making "bread" from flaxseed & egg whites. It looked and tasted like something I'd insulate my attic with.
Does anyone else have any ideas or things they've tried? Vegetable ideas are appreciated!

    In the recipes thread, you will find my recipe for grain free tortillas. Feel free to look at my diary (you'll have to scroll through to times when I was recording. I just started logging again a couple of days ago, prior to that (Jul-Nov) you'll have to look in the notes section. Before that I was logging normally.

    I am not soy-free, but I am grain free and currently vegan and most of the things that I use soy (tofu) for you can use nuts (for cream sauces), mushrooms or meat (stir fries and curries).

    "whole" starch sources: Potato, sweet potato, squash, cassava, other root veggies, beans

    noodles: spaghetti squash, shiritaki noodles, bean-thread noodles, 100% buckwheat soba, spiralized veggies

    bread/buns/wraps - see my recipes on grain-free board

    breakfast "cereals" (pseudo-cereals, not part of the grain family) - buckwheat (puffed, porridge flakes/grits, whole groats, kasha), quinoa (cooked, puffed, porridge flakes), amaranth (cooked, puffed)

    Awesome! I am going to look up buckwheet soba...didn't know that existed. I love soy but my hormones are a wreck, so I'm trying to eliminate as many suspect items as possible to see what is causing it. Thanks!

    After wrecking a number of batches of buckwheat soba by overcooking (carefully following the instructions on the package!) I finally got them right by simply soaking in hot tap water while I cooked the rest of dinner, rather than boiling them, which makes them all stick together in a lump. If the noodles were thicker, maybe I would cover will boiling water, but I would not boil them on the stove for any length of time.

    Here's a recipe for homemade buckwheat noodles that I haven't tried yet, but having made some really homemade perogies with buckwheat, I expect it should be a fairly easy dough to handle:
