1/8 - 1/14 Food of the Week (STEAK) (SALAD) (STRAWBERRIES)

Hi group friends,

One Suggestion for the group threads was to include a food item of the week and have all of us share healthy recipes , so we could keep our menus fresh and plentiful! Our fabulous leader, group starter ask if I minded taking this on...of course I don't mind especially since I didn't meet. My 1lb loss goal this week!

Each week will use a protein, a veggie, and a fruit

This week our food items are :
STEAK (flank, flat iron, sirloin, etc..)
SALAD ( your favorite kind to make, full of healthy veggies & fruits), and
STRAWBERRIES (anything that has strawberries, smoothie, salad, or favorite topping to go on strawberries, etc)

The more recipes the better our variety to choose from!

    My favorite is grilled steak! I buy flat iron because it is easy to portion control and I can feed my family of 6 for around $12-$14. (which is much cheaper than eating steak in a restaurant )

    I brush The steak with a little extra virgin olive oil, a tbsp. per each steak. ( I usually buy 2 for my family), then season it with, kosher salt, pepper, granulated garlic or use a seasoning labeled specifically for steak.

    Put it on the grill, cook to your desired temp. ( rare, medium rare, medium, well, well done)!

    Let it sit for a few minutes, then slice into strips...portion size for me is 4-6 ounces depending how hungry and I weigh it on a scale.

    This is also good on a salad and often I eat leftovers on a 3 cup romaine and spinach salad, with balsamic vinegar.

    I have actually never eaten steak on a salad before. Is it good? It seems like an odd combination to me for some reason. I will try it this week!

    Does anyone know what the leanest cut of steak is?

    Yes very good! I don't like cold steak so if the steak is leftovers than I warm it up slightly just to take the chill off! Also easier to eat on a salad if you cut it into bite size pieces before you warm and put it on the salad. Use your favorite dressing as well!

    I want to say that sirloin trimmed of fat is the leanest but not 100% sure!

    1/4 cup honey
    1 tsp cinnamon
    Stir together until creamy and well blended. Serve with fresh fruit, like STRAWBERRIES!!

    My fave steak recipe is Ka-Bam Kabobs (yeah, it's an Emeril recipe) I'll try to post a link tomorrow when I'm not using my phone for posting. It's a lot of seasonings, some liquids, marinade, skewer with veggies and grill. I love kabobs cause you can keep you meat portions smaller and reasonable and get delish grilled veggies too!

    Oh that fruit dip sounds yummy! Kabobs sound good, might put that on my menu this week !

    Here's the website for my favorite kabobs. I use low sodium soy sauce though and I mix up my veggies - adding tomatoes, zucchini, etc. I really just love kabobs with lots of grilled veggies!

    What I also love about this is the Baby Bam - it makes a bunch and you can save it in an airtight container and use it on other things - sprinkle a little on a steak before grilling; sprinkle a little in with your ground beef and some worcestershire sauce and make hamburger patties; sprinkle a little on pork chops or chicken or veggies, etc. A little goes a long way and it's so good. I had friends over to grill and one of the guys found out that was my "secret ingredient" so he stole my stash and I had to make more. LOL! It really is that good.

    I'll start with a strawberry dessert recipe. It's quick and very tasty.

    Crumble some graham crackers into a bowl, scoop some lemon yogurt on top, then slice strawberries on top of that. BOOM, YOU'RE DONE.

    It's so super fast and is really, really delicious.

    And next, a favorite salad recipe. I saw it on the Etsy forums years ago, printed it out, and haven't looked back since.


    Quinoa Salad
    All ingredients are more or less "to taste". Also, nothing is stopping you from mixing it up a little - want more protein? Toss in some chicken! Prefer dried cranberries to raisins? Dooo eeet!


    - One cup of Quinoa, dry
    - 3 or 4 stalks of celery, chopped
    - 1 big apple, chopped
    - 1 cup of walnuts, chopped in big pieces
    - ½ cup of raisins
    - Shallots, finely diced, perhaps 2 tablespoons or so
    - Fresh parsley, chopped, maybe a 1/3 cup or so
    - Other suggestions: sunflower seeds, pineapple, mango, scallions, asparagus, dried cranberries or cherries, avocado, cilantro, mint, etc etc

    - Olive oil, about 1/4 cup
    - Apple cider vinegar, about 1/8 cup
    - Honey, about 1 tablespoon
    - Juice from 1/4 a lemon
    - Salt and pepper to taste
    - A light dusting of garlic powder

    Begin by cooking the Quinoa as it states on the package. Once it’s done, set it aside to cool a little.

    Place the chopped apple in a large bowl and toss it in the lemon juice just to keep it from turning brown. Then mix together with the other vegetables, herbs, and nuts, etc. Whisk together the olive oil, vinegar, and honey in, then pour about half of it over the veggies and nuts mixture and stir. Then fold in the Quinoa. As the mixture gets dry, add more liquid. Add salt and pepper to taste as you go.

    Here's my version of a healthy steak sub....

    I get "chuck tender"steaks from Walmart. (you can use any lean cut steaks)
    I slice them into strips and put in a crockpot with TONS of peppers, onions and mushrooms.
    I cook in the crockpot for like 12 hours.... Until meat is falling apart. :P

    Then I will toast the sandwich thins or I've even used pita bread.... Lightly spread 1tbsp low fat miracle whip on and add my meat and veggie mix and top with 1 tbsp steak sauce. I personally skip the cheese but you could add some.... And VOILA... Healthy, yummy tasting "steak sub like" meal.....

    I love steak salad too! I use fat free Catalina dressing on it. SO YUMMY!
  • Steak = No recipes. I don't eat red meat.

    Salad/Strawberries = Yummy fruit salad from foodnetwork.com. I made this for the first time last summer and my kids loved it.

    Ingredients
    1 papaya or mango
    1 cup strawberries
    2 kiwis
    1 banana
    2 navel oranges
    3 tablespoons honey
    1 tablespoon Grand Marnier, optional
    3 to 5 sprigs fresh mint
    1 cup raspberries or blueberries
    Directions
    Peel and dice the mango or papaya, and put in a medium bowl. Trim the strawberries' stems and half or quarter, if large. Add to the bowl of fruit. Peel and dice the kiwi, add to bowl. Peel and slice the bananas, add to bowl.

    Cut the top and bottom off the oranges just deep enough to expose the inner fruit. Following the curve of the fruit cut the skin and pith off the orange in panels. Holding the orange over the bowl cut between the membranes to free the citrus segments. Let them fall into the bowl as they are cut free. By hand, squeeze all the juice from the remaining membrane over the fruit, then discard. Repeat with the other orange.

    Lightly stir the honey and Grand Marnier, if using, into the fruit. Strip the mint leaves off the stem, tear, or chop into smaller pieces, and stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours.

    Serve.
