And I must be doing something wrong.
I made chicken parm. with it on Saturday and it was delicious.
I attempted pancakes today, and not so much. The flavor was overwhelming, and I don't care for coconut. My kids wouldn't even eat them.
I love the high fiber content (and desperately need it!), but the flavor is just too much for me. Perhaps I just bought the wrong kind?? It's the only one I've found here - Let's Do Organic brand. Or, maybe I just need to stick with recipes that call for that flour + other flour?

I personally hated coconut flour. Nothing I made with it tasted good and it was hard to get the liquid ratios correct because it absorbs more liquid than other flours do. I know a lot of people love it but it's not for me.0

I love it, but I usually buy ready-to-use mixes for pancakes and cupcakes etc. that use coconut flour. I don;t really try and bake with it myself. I've never noticed a strong coconut taste though in anything we've used it on. I really really hate coconut, but I can't taste it at all in the baking.0

I love the coconut flour, but I mix it 1 bag of coconut with 2 bags of white rice flour. It has a nice subtle coconut taste then. Also a little more cost efficient at least where I can find it as the rice flour is about 4$ a bag, and the coconut is about $12.
And most recipes you need to add Xantham gum, and extra moisture to the mix, to keep it from getting crumbly.

I've never tried baking with it exclusively either and also use some mix of rice or nut flours.
For a pancake replacement, sweet potato pancakes are really good. Just grate a sweet potatoe, mix with two eggs and pan fry for a couple minutes on each side.0 -
Well, I made brownies tonight and they were actually decent, but I won't be doing pancakes again! LOL! Glad to know others aren't crazy about it too.0
