help me! need food ideals

As some of you might know, I'm having trouble getting my goal in calories. I can never seem to get over 1200. My goal say to eat at least 1320. Last week I tried to wing it, (eat write down as I go) and I got 5 days out of 7. Not that not good for me, I need to eat more so this week I'm planing my food out in the morning. But any-who I'm need help looking for some different, inexpensive food ideals. I'm on a tight budget with a family of four. My food entries are open, and (I know they aren't the best food, but I have to work within my spending on food.) But this is like a every month kinda thing. Same thing over and over. This is getting old to all of us, so please give me some new ideals on healthy eating. (Note: hubby and my youngest doesn't like a lot of veggies. So if you know a way to hide them then please share) and feel free to add me as a friend, so I can help u and u help me. Thank you everyone

    Have you tried banana ice cream? You take bananas and cut them up and put them in the freeze for at least an hour or two. (Small piece.) Then put them in the food procsessor. It looks like gravel. (you'll need to wipe the sides down a few times). Eventually it turns into a smooth creamy texture. (About 5 minutes). If you need more cals or flavor, add a spoon of peanut butter and some cocoa. Last night I tried it with Nutella. Nice bedtime snack.

    Is there anything your family won't eat? I add vegetables to everything, my husband hated it until I stopped telling him they were there until after he finished eating :)!

    I add grated zucchini and carrots to pasta sauce, as well as spinach in some instances. It's all about finding vegetables your family will eat and cramming as many as you can in there. One vegetable my husband can't get enough of is spinach, so I add frozen spinach to just about anything. Another is bell peppers. I add them to tacos, stir fry, soup, baked potatoes, even chili.

    For lunch I get lean cuisines or tuna salad packets to make a sandwich with most days. Or I eat what I prepare for the kiddo. I'm struggling with snack foods too. They're not in my budget and I have no ideas. But for dinners, here are a few I've found that we've liked:

    Thanks! Hopefully they're helpful. I also like to buy frozen veggies. They last longer and are usually cheaper. :)

    What can I eat a lot of without feeling guilty? Besides the obvious celery, carrots, and water.

    I think the trick is finding foods that are more filling for your calories. I saw this list on a website:
    ¼ of a large bagel
    2 slices American cheese
    1 ounce pretzels
    ¼ cup premium ice cream
    ¾ can of regular soda
    2/3 of single serving bag of potato chips
    2/5 of small bag of regular M&Ms
    1/32 of an apple pie (or ¼ of a regular slice)
    4 ounce glass of wine
    1.4 ounces of hard liquor
    ¾ bottle of beer
    2 regular Oreo cookies

    2 cups strawberries
    4 cups cherry tomatoes
    2 cups chopped peppers
    2 cups diced watermelon
    7 cups celery
    1 medium apple
    4 cups cauliflower
    3 cups air-popped popcorn

    You were probably surprised how little 100 calories is for each of the top list foods and how much 100 calories is for the foods in the bottom list. The top list is of foods that are high in fat, sugar and/or alcohol – and relatively few nutrients. The bottom list shows foods that are high in fiber, water, and nutrients.

    If you are concerned about your budgets shop the sales, especially on meat, Not only at your regular stores, but many Walmart stores have packaged meats marked down as they approach expiration (freeze as soon as you get home). Including Pork shoulder roast recently at $1.56 per pound, as well as turkey italian sausage. I will usually only buy meat under $2 per pound. I take advantage of periodic sales at our local grocery store on any meat, and since your are having a problem reaching calories neede, a meat with a few more calories may not be out of the question. I just got bone in skin on chicken breasts for $1 per pound at Hyvee.

    I also make use of the frozen vegetables that were previously mentioned as well as frozen fruit. They; are picked at the "Peak of Ripeness". I like to use the frozen vegetables in soups and stews. I also like using the frozen fruit in either smoothies or with vanilla yogurt.

    Some of my go to meals include "fajita saute" using either chicken or even precooked shredded pork, added to a salad, or a tortilla. We also use Taco meat on a salad i make my own seasoning using chili powder, onion powder, lots of paparika and a bunch of cumin, once again you can use any of your meat choices with the same seasoning. I recently made cabbage lasanga using a head of steamed cabbage, one pound of hamburger, our homemade pasta sauce, 1.5 cups of cottage cheese, a cup of mozerella cheese and an egg. It baked about an hour, if you weren't told you wouldn't know it wasn't regular lasanga. Chili was on the menu recently, i add onion and green pepper for additional veggies.

    Try some recipes with beans, they add protein and fiber, i have been known to throw them in the taco meat i mentioned earlier, it adds volume and may allow you to get an extra serving or more out of the same pound of hamburger.

    Don't forget good old string cheese. Weight watcher brand string mozerella cheese are only 50 calories each, combine with an apple or a banana and you have a great start to breakfast or a mid day snack. Speaking of dairy, don't forget your milk, 2 cups of skim milk equals 160 calories.

    I use their free weekly menu planning to get my meals set up. It is just a matter of modifying the recipes to healthier choices. It costs a tiny bit more but I'm not wasting food and feeding a family of 4 for under $70 a week isn't half bad.
