Tomato and Roasted Red Pepper Soup.

Tomato & roasted pepper soup
From ‘Avoca Soups’

180 cals (with 4 tbsp Olive oil)
121 cals (with 2tbsp Olive oil)

1 onion – peeled & chopped
4 tbsps olive oil (I would reduce to 2tbsp)
1 garlic clove, peeled & finely chopped
750ml veg or chicken stock
400g can of tomatoes
Sprig thyme
1 tsp tomato puree
Pinch ground cinnamon
2 red peppers, roasted and roughly chopped
1tsp lime (or lemon) juice

The secret of this recipe is in the roasted peppers. This brings out their natural sweetness which gives this soup its extra depth of flavour.

Saute the onion in the olive oil for about 10 mins, until translucent. Add the garlic and cook for 1 min. Then add the stock, tomatoes, thyme, tomato puree, cinnamon and simmer for 20 mins.
Stir in the roasted peppers and then puree the soup in a blender. Reheat gently, add the juice to taste and check seasoning

The above soup is from a well known Café chain over here. I made it today and it was fabulous. I would cut down to 2tbsp olive oil though....to cut the calories a lot.

    Awesome recipe. I tweaked it a bit because I didnt have enough onions and i was out of canned tomatoes. So I roasted some fresh tomatoes. I definitely will be doing this one again

    Good innit!!! Easy and tasty. I have tweaked it a bit too. Had only 1 pepper one day Also have thrown in leftover pasta and a little pesto to give it a twist. I also put a lttle as a sauce on pasta for the kids. Glad you tried it and liked it.
