Discovering a gluten intolerance and symptoms question

I have been eating paleo/primal since October (no grains, dairy, legumes), and this past month I've done the Whole 30 challenge, which is basically the strictest form of paleo, where you eliminate all sugar, alcohol, grains, legumes and dairy and only eat whole foods. Since on this diet for the month of January, I have been meticulous in preparing foods that fit the guideline, obviously kept a food diary and detailed notes about my energy levels and appetite. I got a 24 hour flu bug (nausea, extreme fatigue and weakness, stomach cramps, diarrhea). I slept all day and felt much better the next morning. Now the weird part is I've gotten these flu bug symptoms 3 times this month, each time only lasting 24 hours. Looking back at my diary, I've noticed that these 3 days all occurred between 2-4 days after I've gone out to eat at a restaurant.

I'm wondering if I was accidentally exposed to gluten at these meals. At all other meals this month, I've controlled and known exactly what ingredients I was putting in my body, except for the 3 times I went out to eat.

My question is: How long does it take for symptoms to occur after eating gluten? Could it be possible that I'm feeling the effect days after exposure? The most recent time I went out to eat, I had symtpoms with hours of eating, but its 2 days later that I'm feeling really sick and awful.

    Everyone reacts differently after eating gluten unknowingly. My symptoms--coughing--usually turns up within 24 hours. But it does sound like the restaurants are having some kind of effect on you. It could be your body reacting to food that you are not cooking and it is prepared differently than usual. Could be as simple as an oil or seasoning the restaurant is using that you don't.

    For me the symptoms start within two hours so its totally possible you were suffering from gluten "poisoning".

    My body reacts around the four-hours-after-exposure mark and it lasts several hours.

    It depends on you, but when I get "glutened" I feel like I have the flu for 48 hours.

    It takes a couple hours for the symptoms to set in. My face also breaks out into red splotches.

    Mine too! It looks like rosacea!

    Thanks for your own personal experiences.

    Come to think of it, I have had immediate (and in the case of last Sunday, rather violent) reactions within hours after the meals. Last Sunday I had to abandon my shopping cart at the grocery store to run to the bathroom, and Monday I felt bloated, sick to my stomach, and had no appetite. Today I feel tired like I got hit by a truck, with stomach cramps.

    I think I need to take more notice when keeping track of my food diary to note how my body feels each day. Looking back, I did comment often after the possible gluten exposures that I felt exhausted and could barely get out of bed.

    I have a friend who is celiac and when she gets glutened it's typically within 24 hours that she feels the effects but they can last for up to two weeks for her. I'm so thankful I'm not as sensitive because it just knocks her out for so long.

    Yeah, I'd go back and look. My symptoms don't start until the next day, though I might start to get a headache pretty quickly.

    Also i get bad back pain within 24 hours.
