Hey groupies, this week share a favorite recipe! Anything goes... Sharing helps others try new things and keeps our menus from going stale!

    I like to make a big pot of soup on Sunday. Then I have a healthy lunch all week. I know what is in it and it makes my week much easier to manage. Here is an easy one

    Corn soup

    1 onion diced
    1 green pepper diced
    1 T olive oil
    4 cups vegetable broth
    1 can diced tomatoes with the juice
    10 oz frozen corn
    1 potato cubed
    1/2 t cumin
    1 can kidney beans drained

    Sauté onion and green pepper
    Add remaining ingredients, bring to boil, cook until potato is tender about 15 min

    For more of a kick use tomatoes with chilis or add 1/4 t chili powder
    Can add garlic with the onions, I have issues with garlic so usually leave it out
