I may go to Nevada in March for a three day clinic. I do not want to rely on clinic food. Yet I will be based at a motel. I need to find out if I would have a kitchen or fridge. My Plan is Plant Based Food, nothing processed. ?Filling starches that don't need cooking??

Breakfast Ideas - fruit, whole wheat wrap with veg and hummus?
lunch - sandwich with veg. Fruit. Buy pre-chopped.
Dinner - large salad, beans,
Snacks - fruit, carrots, celery, a dip?, healthy peanut butter.
Is there anything I could make at home that travels well?

A cucumber salad is always nice and refreshing. Not sure how well it would travel but may be able to prepare it at the hotel room fairly easily. Granola travels well and is a non-cook starch.0

Do you bake? Plenty of "dinner" options you could make at home that keep for at least a couple of days - like some sort of Cornish pasties.0
