Heirloom tomatoes

If you have never had heirloom tomatoes, please go to your local farmer's market or Whole Foods or Central Market or wherever you get your organics and buy a nice, firm one. Yellow is my favorite. Slice it thick, put a sprinkle of crunchy kosher salt on it, and eat it like an apple. After you stop saying, "OMG, where have you been all my life," dice a beautiful collection of them -- all colors -- into a bowl, sprinkle with salt, chiffonade some fresh basil, and douse the whole thing in balsamic vinegar. Put it in the fridge and eat it as-is or with tuna or in salads or atop fish or on a burger. You will thank me.

Sadly, there aren't going to be any farmer market tomatoes here until May at the earliest!0
