Hi everyone! I am wanting to use up some chickpeas that I have, but am tired of the same old things I do with them...I roast them, make burgers with them, or different Indian dishes with them. Does anyone have any favorite dinners you like to make with them?

Thank you!!!

I grill them on the stove with mixed veggies I have in the fridge, feta, and pesto sauce. I had it for dinner actually. It was really good.

I put them on top of almost every salad to up the protein too.

First thing that came to my mind was falafel burgers.

[edit]...just realised you already said burgers...whoops.

Use them in soups or stews maybe?

I think you are quite familiar with Indian recipes, so I just wanted to share this recipe that requires chickpea flour. You can easily buy chickpea flour from any Indian grocery store.

I love chickpeas!!!! This is quite basic, but I love heating them up with olive oil and tossing some seasoning on them (thyme & mesquite are best.) Throwing them in a salad is also pretty basic but amazing (I'm obviously no chef.)

I don't know if you like Lebanese food at all, but I about died when I saw you could make Kibbeh with potatoes and chickpeas! I don't get nearly as fussy as she tells you to be (I skip the whole halving/skinning them step and just throw them in whole.) I also use way less flour and oil, but it's amazing to find something close to a dish usually made with a ton of lamb and hamburg! I sandwich a layer of pine nuts in the middle and they get so plump and juicy....mmm.

    Ok, now I'm craving Kibbeh...

Honestly -- I like putting them on my homemade pizzas at home. It adds a bit of something different...

Burmese tofu!! If you can grind the dry ones into a flour. If they're canned, I make chickpea salad sometimes with carrots and celery, tossed in veganaise or a vinaigrette.

They make a great dip or sandwich filling if you blend half a tin with about a tablespoon of lemon juice (add more or a little water if necessary), add a teaspoon of toasted sesame oil, loads of black pepper and toasted sesame seeds.

hummus of course: best snack ever with some raw veggies. <3:) They're also a nice addition to a simple vegetable stir fry or roast.

I found this great chickpea and sage recipe for whole wheat spaghetti at VegetarianTimes.com: 1 can chickpeas, sage, olive oil, tomatoes, kalamata olives, garlic, and honey to taste. About 300 calories per serving.

I use pinterest for recipes. Yesterday I made some lovely chickpeas with smoked paprika, garlic....yum I just learned that eating chickpeas increases the good bacteria in your bowels by crowding out the bad ones.
