Favorite Healthy foods or Recipes

I love This muffin because I can add things like blueberries or mini chocolate chips. Nutmeg and banana extract is good also. I sometimes use this in place of bread if I want more fruit at breakfast! :-)
I got this off of DiabeteDaily.com

1/4 cup ground flax seed
2 tsp of cinnamon
1 egg
1 tsp of coconut oil
1 tsp baking powder
1 packet of Stevia


Mix all in a microwave safe coffee cup
Put in Microwave and cook for 50-65 seconds depending on your microwave
Turn cup over and muffin will slide out
