    Ingredients:
    2 Eggplants (pealed)
    4 Tbps Olive Oil
    1 Tsp garlic (or to taste, chopped)
    1 Tsp Red Pepper Flake (or to taste)
    4 Tomatoes (seeded and chopped)
    1/2 Cup Heavy Cream
    1/4 Cup Parmesan Cheese

    First slice the peeled eggplant thinly lengthwise, sprinkle liberally with salt and lay out on a tray, rack, cookie sheet, whatever works and let sit for 30-40 mins so all the extra liquid drains off. Rinse the eggplant and dry thoroughly. Cut into thin strips, like noodles. Heat the oil in a pan over medium heat and add the garlic and pepper flakes and cook until garlic is lightly browned. Add the eggplant and toss to coat. Then add the tomatoes and cook for another 3 mins. Then add the cream and turn the heat up a little so the sauce thickens. Add the parmesan cheese and serve.
