Apple Cinnamon Quinoa

Just realized I forgot to post any recipes last week! I know I made a good one so I'll have to find it and add it later. For now, here is what I ate for lunch today (minus the chia seeds because I didn't have any. Still yummy though!) Taken off of Pinterest.
Ingredients:
1/4 cup dry quinoa
1/4 cup cow/soy/almond milk (I used vanilla soy mil)
1/4 cup water
1/4 teaspoon cinnamon
1 packet of stevia
2 tablespoon raisins
1 tablespoon chia seeds
1 medium apple, finely chopped (I used granny smith)
Directions:
1. In a small saucepan bring quinoa, milk, and water to a boil.
2. Reduce heat and cover. Simmer on low for about 5 minutes.
3. Add in cinnamon, stevia, raisins, apple, and chia seeds. Continue cooking on low until all liquid is absorbed. Total cook time is anywhere between 8-12 minutes.
