If not carbs...what do I eat?

A friend of mine has cut out carbs in her diet and has lost a bit of weight (not loads, she wasn't really heavy) but probably 10lbs or so.
It seems to suit her metabolism and she says she feels better, not as bloated or gassy.

But I don't know what I would replace carbs with? I tend to have carbs with most evening meals!

I am not 100% carb free, but I find just substituting loads of fresh veg & fruit does the job.

I realise there are carbs in most things, but avoid the obvious heavy hitters, like rice, pasta, bread, spuds, pastry and the like

PS My not 100% carb free was shown in spades today, had roast chicken pub lunch in Chichester, complete with roast spuds & Yorkshire pud, and for evening gobbled two white baps, but I did put salad in them, so a nod towards health there

You might want to try low GI which allows carbs of a more complex nature. They require more effort from the body to digest and have a slower release into the body. I tend to use brown pasta, brown rice, new potatoes.

I don't think low carb diets are especially healthy but what you can do is reduce the amount of bread, rice and pasta that you have. Most people do this by increasing their protein and loading up on healthy vegetables (these are carbs too)
