GLUTEN FREE THIN BUNS FLUFFY AND EASY!!

TRIED THESE ON THE WEEKEND, SO MAKING THEM A GO TO RECIPIE 11 G CARBS, 200 CALORIES, 3 G FAT

1/4 COCONUT FLOUR
1/4 GROUND FLAX SEEDS
1/2 TSP BAKING SODA- ALL DRY INGREDIENTS SIFTED TOGETHER

4 EGGS (BEATEN)
1/4 GREEK YOGURT
1 TBSP HONEY - MIX WELL, POUR OVER DRY INGREDIENTS, LET STAND 5 MINUTES SO THAT FLOUR ABSORBS SOME LIQUID

SCOOP OUT 6 EVEN BLOBS ONTO PARCHMENT PAPER LINED COOKIE SHEET, SPRINKLE WITH POPPY SEEDS, SESAMEA SEEDS AND OR CHIA SEED AS YOU WISH.
BAKE AT 350 FOR 15 MINUTES (GIVE OR TAKE, WILL BE SET BUT SOFT AND LIGHTLY BROWNED) USE TWO ONE AS TOP AND ONE AS BOTTOM FOR SANDWICHES (PB AND BANANA NOM!) OR BURGERS OR BREAKFAST SANDWICHES ETC.
TWO HALVES ARE 200 CALORIES (INCLUDING 3 TBS SEEDS I USED 1 TBS OF EACH) AND ONLY 11 CARBS, 3 G FAT
SUPER FLUFFY AND NOT HARD, DENSE AND DRY LIKE OTHER GLUTEN FREE BUNS, FREEZE GREAT! JUST THAW IN THE FRIDGE OVERNIGHT AND POP AND EGG ON IT IN THE MORNING FOR QUICK YUMMY BREAKY.

  • no pics yet sorry, once I get muffin top pans I am going to make them again in those (so you can cut them in half like a regular bun) then I will take pics :)
  • measurements are 1/4 yes, and just an update, made these in 3" mini cake pans and they are gorgeous! will take a picture soon as i can, perfect, so invloce with these buns! lol I make cheese burgers for my family, hubby and son get regular buns, I use these, bacon, eggs and cheese, hubby and son get english muffins I use one of these! so glad I found them, try them you wont regret it :)
