5x5 is a barbell program where you do 5 sets of 5 repetitions of the same lift.
Any barbell program will usually be broken down in X numbers of sets along with Y number of reps, and the program name often reflects that X/Y naming convention in some way (3x5, 5x5, etc). You do lifting in sets because the pauses in between the sets allow your body to recover somewhat before you lift more.
Repetitions between 1 and 5 per set are traditionally used for strength building, versus 6-12 reps for hypertrophy/bodybuilding and 12+ reps for endurance.
Therefore 5x5 is obviously geared toward strength gains.
With more traditional 5x5 programs, the weight of these 5 sets is staggered, so for example you'll do 1 set of 5 reps at 40 pounds, another set of 5 reps at 45 pounds, another set of 5 reps at 50 pounds, another set of 5 reps at 55 pounds, and then your last set of 5 reps at 60 pounds (that last set is called your "working weight" and is usually the highest weight you've attempted for this lift up until that day).
The thing with Stronglifts is that all 5 sets are done with your working weight for that day, and whatever sets you do beforehand are considered warm-up sets.
The 5x5 concept has been around for decades, and there are variations of it. Stronglifts is one of those variations.
