I have a recipe for hummus I've loved for a couple of years. I think it passes P3 standards:

1 15 oz. can chickpeas (garbanzo beans), drained, rinsed, and toweled dry
(you can skip the toweled dry part if you like, but it will be a little less smooth since toweling removes many of the skins)
    1 medium clove garlic, minced
    3/4 t. salt
    pinch cayenne
3 T. freshly squeezed lemon juice
1/4 c. tahini (find this sesame seed paste in natural foods stores or Mediterranean section of some supermakets)
1/4 c. extra virgin olive oil
    1/4 c. water

This makes about 2.5 cups. I want to make some this week, but I'm not sure if I should make a whole recipe since my hubby and kids don't eat hummus, and I don't want it to go bad. I think I'll make a half recipe and freeze the other half can of beans for another time.
