Ok, here's what's on the menu for next week. I'm gonna have to be creative about WHEN I will cook all this stuff, cuz Sunday (my usual cook-up/prep day) I will be in class all day for my hand-gun permit :happy:

I don't do the whole Monday we'll have this Tuesday we'll have that... I just plan a week's worth of meals and cook as much as possible on the weekend. Then we both have food to grab on our way out the door to work (for lunch) or to eat when we get home (dinner). Breakfast is usually eggs + whatever... lol We go through 5 dozen eggs a week! It goes in my mayo and ranch dressing, I eat 3 for breakfast, he eats 4-5 at breakfast and we both carry HB eggs to work or the gym!0

My menu will be:
Damn Fine Chicken (nomnomPaleo)
Spicy tuna egg cups (from NomNom Paleo app)
Lamb burgers with pistacchio pesto (Primal Blueprint Quick and Easy)
Sweet potato mash for breakfast
Hmm, at a loss for side dishes/veggies. Probably more collard greens, kale, and trying to add more starchy vegetables to get carbs for my runs.0 -
Those meatballs sound amazing, thanks for sharing. I usually cook sunday so I'm prepped then do two more big cooking nights during the week to keep things interesting and add fresh food. It's a lot of work and cleaning but I am really enjoying taking the time to cook more.0

I want to try meatballs or something similar as well - but I still have a freezer FULL of food from my cooking extravaganza last weekend (roast & veggies, chipotle chicken soup, paleo chili, steaks ready to grill).
I'll be picking up the usual suspects to throw together stir fry veggies that go with just about every meal. And eggs. LOTS and lots of eggs.0 -

Me too actually! Though I couldn't find sugar-less bacon so I bought prosciutto instead.
I don't have it fully planned for the week, but we hit up the grocery store after work yesterday to grab stuff to make:
- Almond breaded fish and chips (sweet potato), with a guacamole salad (last night - was super good!)
- PB&J Chicken made with sunflower butter and crushed blackberries (recipe from Whole9 facebook page comments...borderline SWYPO though, but it's not like PB&J was ever a staple in my diet) - also was very good!
- Prosciutto-stuffed Chicken (with salad)
- Beef roast with cauliflower-mash.
- Spaghetti squash and veggie-meat sauce
- Big *kitten* salad (topped with avocado, chicken, eggs, and cooked prosciutto)0 -
I don't even know what prosciutto is? Does it taste like bacon? Where do you get it in the grocery? Thanks0

I made my own nut butter last night for the first time ever and all I can say is I am NEVER buying it from the store ever ever ever again!!! It was so easy and the results were amazing! Tastes just like the Justin's Maple Almond butter. I look forward to polishing off this jar soon & experimenting with adding unsweetened cocoa powder next time!
Cashew/Almond Butter
1 cup salted, roasted (no oils) cashews (Planter's Natural Harvest)
1 cup raw almonds
2-3 teaspoons coconut oil
1-2 medjool dates, pitted & chopped
1/4 tsp salt
1. Process nuts in bowl of food processor until a fine grain (I used my Cuisnart MINI chopper, a bit taxing on the motor, but it held up!)
2. Add salt and process. Add date(s) and coconut oil (one tsp at a time).
3. Scrape down sides of bowl and continue processing until desired consistency is reached. Add additional coconut oil as desired.
4. Place finished nut butter in glass jar with tight fitting lid & store in refrigerator. Will keep 1-2 weeks.
yield: 11 oz
serving size: 1 oz
calories: 130 per serv.

I mixed some vanilla and cinnamon in with my raw almond butter the other day. It was pretty tasty. But I have to try yours, ASAP.0 -

It's extremely thinly sliced ham (very salty). It's near the deli at my Kroger store in packages that hang in a cooler (sort of like they hang the fancier sliced cheeses).0 -
Mine:
M- Salmon, cauliflower and salad
T- Crockpot beef and broccoli
W- "Tacos" (ground turkey with mexican spices, plantain chips, guac, lettuce and tomato)
T- Grilled chicken, roasted sweet potato, spinach
F - I am photographing a wedding... might bring a salad w. chicken just in case there is nothing I can eat.
S - Pork tenderloin, green beans, salad
S- Roasted Turkey & veggies0
