Skinny (and Fabulous) Fish Tacos

Hey All,
I made these for dinner last night and they were a huge hit... and super easy with very little clean-up. I should preface this by saying I am the type of cook who just throws things together and doesn't measure so I'm sorry if my "measurements" on the recipe are a little weird.
Here's what you need:
Talapia (I used 2 pieces since there are two of us in my small family.)
Smoked Chipolte Seasoning (any Tex-Mex seasoning will do, or just use Salt and Pepper)
Olive Oil (to cover the fish)
Lime Juice (half a lime)
Fresh Dill (keep the sprigs whole)
Red, Orange and Yellow Peppers (I use Wilson's Mighty Mini Peppers)
Green Onions
Salsa Verde
Romaine Lettuce
Sour Cream (if you want it)
Here's what you do:
Take a piece of foil, put the fish on it. Put the olive oil, seasoning, lime juice and whole dill sprigs on the fish. Wrap the fish up in the foil and secure it tightly. Put it in the oven for 20 minutes on 350 degrees.
While it's cooking cut the peppers and onions.
When the fish is done, assemble. Take a whole leave or romaine and put the fish on it (I like to break it into pieces, this usually allows me to have 3 "tacos". On top of the fish, put your peppers and onions and salsa and wrap it in the lettuce and there you go. Fish Tacos for Everyone!!
Hope you like this. You can pretty much do any toppings you want.
