Post your favorite healthy recipes here for others to try!

I make this all the time:

Taco Soup

Ingredients
1 lb ground beef or ground turkey breast (I omit the meat because I don't eat it...I usually just add a can of reduced sodium black beans instead)
1 (15 ounce) can stewed tomatoes (any flavor)--depending on your taste you can get crushed or diced tomatoes, I do this to change the texture sometimes
1 (15 ounce) can stewed tomatoes (Mexican flavor)
1 large onion (chopped)
1 (1 1/4 ounce) package taco seasoning mix
1 (1 1/4 ounce) package hidden valley ranch dressing mix
1 (15 ounce) can chili beans
1 (15 ounce) can pinto beans
1 (15 ounce) can whole kernel corn or 1 bag of frozen corn


Preparation
1. Brown the the meat (if applicable) and onions and drain.
2. Add all the other ingredients, without draining.
3. Mix the taco seasoning mix and ranch dressing mix in with all the ingredients.
4. Simmer for about 1 hour.
5. Serve hot, topped with sour cream, cheese, avocado, raw onions, or nacho chips (optional).

Servings: 10

Adapt it however you wish, it's a pretty easy recipe and I change some things up from time to time as you can probably tell. It's based off of a weight watchers recipe someone had given to me before.
