Week FOUR (April 1st Starters)

I can NOT believe that we are in the home stretch for wrapping up this month! I've been menu planning for what I'd like to cook this weekend, realized that this will stock my freezer for more than a week - and even though I'll be officially done w/ the Whole30 then, I'm still looking forward to eating like this!

My menu for the next 7-10 days:

Red Sauce w/ Meatballs over Spaghetti Squash

Grilled chicken w/ Paleo BBQ Sauce (still need recipe!) & baked sweet potatoes w/ coconut cream & cinnamon

Balsamic marinated steak with grilled zucchini & squash

Orange stir fry chicken & mixed peppers/onions over cauliflower "rice" (no recipe, totally winging it!)

Meatloaf "muffins" with mashed garlic cauliflower (shussshhhh... don't tell the kids it's not potatoes!)

For lunches it'll be leftovers of the above along with what's left in the freezer (roast, chili & soup)

For breakfast it'll be a repeat of the egg muffins because they're SO convenient.

Snacks will be hard boiled eggs, apples & more of that totally awesome cashew/almond nut butter.
