coconut flour

I am currently experimenting with coconut flour. At 187 kcal/100g, it is not something you can eat by the kilogram - but it is an excellent high-protein, high-fibre additive to e.g. joghurt, milk, and fruit smoothies. I got mine from an online shop in Luxembourg which also carries other interesting stuff such as St. John's bread flour. After several days on coconut flour, I can report that it is great! In the evening, 50g coconut flour with skimmed milk, some water, and a drop of almond oil (total ca. 100kcal) suffices to make me feel "overfed" as if I had gorged extensively on a conventional meal. Consequently, I end up eating much less other stuff. Quite amazing!
Mind you, I am not saying that you could survive exclusively on coconut flour. You shouldn't - and you presumably couldn't. But the thing is, I had been hitting a plateau for 2 weeks, and now I am back on track!0 -
interesting - is it just what's left after the coconut oil has been extracted?0

I assume that's what it is - but honestly I do not know how it's made. It smells vaguely like coconut but is rather neutral in taste. I wouldn't call it an "exquisite treat" but it's agreeable and I kind of like it. Particularly when considering the alternatives.0
