Hi everyone!!!

I believe one or two of you mentioned the idea of sharing recipes. Please feel free to share any delicious, healthy recipes that you love! I'm sure I'm not the only person who loves to try new recipes :)

I will post my favorite crock pot soup recipe below :) (I love my crock pot!!)

Chicken Enchilada Soup
2 cups milk
1 cup water
1 can of cream of chicken soup 98% fat free
1 packet of enchilada mix
1 can of black beans (do not drain)
1 can of diced tomatoes (do not drain)
1/2 package of corn (I use a whole package)
1/2 chopped onion
1 chopped green pepper
2 whole chicken breasts (some times I put 3 chicken breasts instead of 2)

6 hours on high or 8 hours on low in a slow cooker.

15 minutes before the soup is done, take a fork and push it into the chicken breasts. If the chicken is all the way cooked, it should just fall apart...but if it doesn't come apart and has cooked the whole time, you can take a second fork and pull it apart (usually this happens when you are cooking on high heat.)

This makes 5-6 servings. (1 bowl = 1 serving) 1 serving is approximately 379 calories.

Also, it is VERY hot when it's finished so please be careful!
