I have a hard time eating enough calories

My weight loss has been painfully slow, and since joining MFP, I think I've finally figured out why. I'm just not eating enough. I mean, I don't feel hungry at all and with the -500 calories deducted from EBF, I can be at 1200 calories a day or below. I drink nursing tea to make sure my supply doesn't suffer too much, which has helped, but I just don't feel hungry and have a hard time eating sometimes.
I work out of the home full time and rush home to tend to 2 children while my husband works nights. I try to exercise because it allows me to clear my head and I feel better doing it, but eating back those calories can be super hard for me because I'm so tired!
My 5 month old reverse cycles, so she will only drink about 4-8 oz of expressed milk and then she wants to be nursed almost constantly when I am home. I eat things that are easy to put together and easy to devour one handed.
My breakfasts and lunches are usually around 400 calories or so each. When I get home, I snack a lot because I can't seem to fit in a real meal. When I do get a real meal, most of the time it doesn't net 600 calories.
Anyone else like this? What can you recommend? I am trying to aim for healthier, fattier foods like avocado and such, but it can still be difficult, especially when I'm just not hungry.

I added a snack at work while I was pumping twice a day. The extra 150 calories each pump also seemed to help my milk supply.0

Snacks like the pp suggested are great ideas. I buy nutragrain bars as I can eat that one handed. Almonds would be a good thing... Me? I eat cookies. I can't help it, it's my weakness. Drinking calories seems to be how a lot of people consume them easily. Is there a juice you like if you want to be healthy? I like soda (but have been soda free for 23 days now!), some people love coffee. My husband and I like hot chocolate in the morning.
I have no problem with eating too much, if I have left over calories in the evening I eat ice cream or cookies after dinner, terrible, I know.0 -
I start my day off with an iced coffee with cream and sugar. I do most of the snacking at night but I'm too tired to actually eat enough calories, so I think adding snacks during the day will be the best for me. I don't do too well with lots of dairy or sugar, so I can only have about 1 cookie before I start feeling ill. I'll aim for more snacks during the day while I pump. Right now I do Greek yogurt during my first pumping session, lunch during the second, and nothing during the 3rd.
I was actually consuming 3 protein bars a day last week in an attempt to get in more calories! They were 240 calories each, and I was still below my rec. intake.
