Chocolate & Nut energy truffles- 2 net carbs each!

I just found this recipe on BBC good food website:

And tweaked it a little to make it lower in carb. These would a perfecr energy boosting snack or just something to go with your afternoon coffee for a 'sweet fix'.

Make 8 Balls- 2 net carbs per ball.

100g (approx 1 cup) of crushed pecan nuts/ almonds or macademia nuts
1 tbsp ground flax
1 tbsp unsweetened cocoa powder
50g(1/2 cup) unsweetened coconut flakes (unsweetened dessicated coconut)
2 tbsp unsweetened almond butter.
1/4 tsp splenda

Put in a food processor/bowl and mix thoroughly. Chill for at least 30 mins to firm.

    i don't have powder, i just have the premelted unsweetened cocoa in a pouch, hope it works the same!

    I seriously reccomend you do try these! I made a batch last night. I used hazelnut butter instead of almond (I couldnt find almond but the carbs were the same) and they have a lovely nutella taste to them.

    I also split the mix in half and added a few drops of orange extract, so they are chocolate orange balls!!

    i didnt have the coconut, i must've used it all in my MiMs.. and my food processor didnt chop the nuts at all. the melted chocolate worked good, and i used peanut butter.. no flax. but since my little food processor basically sucks, it wasnt liquidy enough to get it chopped much so i added 3 or so ounces of plain greek yogurt.. but i had to add LOTS of truvia to make it sweet enough for my tastes. ill have to grind the nuts separately i think instead of dumping it all in, then processing. i'm not that fond of the chocolate taste though. i think ill try it again with just PB/pecans/coconut/flax

    Laura,

    I used hazel nuts, and reserved most of the coconut to roll them in (like the original said). Even with that the mixture was too dry to form so I needed to double the almond butter. That went well but I still had at least 1/3rd of the coconut left over.

    They are chill'in now.

    I used the coconut in the mixture and added a little water to make the consistency more 'sticky' to bind.

    I would also use a little more splenda- maybe 1/2 tsp- 1 tsp.

    to somehow just mix almond butter, sweetener, and ground flax? Maybe roll them in regular flaxseed? or roasted chia seeds? Hmm

    i got mine near the 'healthy' stuff, like with the bobs red mill products? next to the TVP, oat bran, flax, coconut sugar. for me, its the baking aisle, but they also hve bobs red mill stuff near the cereals too. check a few grocery stores too, like price chopper here has it, but park n shop does not.
    if all else fails, order online!
