Just made the world's best "healthy scrambled eggs"
1/2 cup egg whites
1/4 cup cottage cheese
a sprinkle of shaved Parmesan
a pinch of Cajun seasoning
Whisk away on medium heat until fluffy and all the cheese is melted ...
OMG! It was SO delish & I got a whopping 28/29 grams of protein to boot with very few calories ...
Next time I might add a little spinach or sumpin' and/or wrap it in a 'smart and delicious' tortilla ...

ps: Some metab boosting Jalapenos might also work with this

Sounds like my mexi scrambled eggs... Except I put salsa and a sprinkle of chedder on top! Very good too - but I do like parmesean, so I´ll have to try this too!0

I do my eggs in the microwave - I've got a "Breakfast Maker" from Tupperware- you don't need Pam or any sort of grease to make them.
My recipe for "fancy" eggs:
2 eggs
1 TBSP orange juice
sprinkle of nutmeg
sprinkle of cloves
sprinkle of cheese (your choice)
microwave on Med for about 2 - 3 min depending on how many eggs - sometimes I make a 3 egg "omelet" with the breakfast maker cause I'm sharing it with my boys. Super yummy!!!

Sounds very good! I usually scramble egg whites and put garlic pepper and hot sauce on them. I'll have to give this a try!0
