Need some help - chicken wings

I did Atkins about 10 years ago and never got the knack of cooking chicken wings, they always came out raw in the middle. I have that sorted now, however, I'm not really sure how many to eat in a serve and whether they are good for a lunch/dinner, or better for a snack.

I scored 2 kilos of raw chicken wings on sale, I've removed their tips and cut them up but I didn't weigh them after the tips came off.
I've cooked them by boiling them and then baking them in the oven with 100g butter and Frank's Hot Sauce and they look delicious (it was probably too much butter, there's lots in the bottom of the bowl).

How many serves should I divide this into? There's almost no carbs (the butter would be more carbs than Frank's Hot Sauce).

Oh, and I'm currently on Induction (almost finished), so any advice specific to phases is appreciated.

    I really don't think that you need to worry too much, butter is (or should be close to no carbs), chicken is no carbs and if the hot sauce doesn't have sugar in it, you're probably ok to eat a pretty decent sized portion.

    Real butter has 0 carbs.... its all fat....

  • I have the simplest wing recipe ever. Preheat oven to 400 degrees. Place the separated wings onto a greased baking sheet. Salt and pepper to taste. Bake about 15 minutes, turn wings over, and bake another 15 minutes. (For large wings cook 20 minutes per side.) While wings are roasting mix equal parts melted butter and Frank's Red Hot sauce, or change portion of hot sauce to personal taste - the more sauce, the hotter the wings. After wings are removed from the oven pour the butter mixture over them and toss.

    We eat as many as it takes to make us feel comfortably sated. However, I am a slow loser and these are very high in fat calories, so even though we don't count calories one must also use a little common sense and be reasonable with portion sizes.

    I snip the wing tips beforehand and boil them for chicken broth.

    I know I can only stomach about 15-20 pieces (separated drummete and wing are each 1 piece). I personally hate the butter and just use the buffalo sauce and ranch.

    I prefer frying them because they retain more water and seem bigger, but baking them is just as awesome. If I fry them, I use the oil 3-4 times to try to not waste it.
  • I love them to bake them with melted butter, seasoned salt, and a little worcestershire sauce.

    Ander, that's almost exactly the way I made them, they come out great!

    Any ideas for leftover wings? I couldn't eat them all in time and couldn't think of anything to do with the leftovers.
    I'll stick to smaller batches I think.

    Leftover? You are talking about chicken wings, right? LOL J/K

    Without knowing how much you have leftover... you can freeze them for another future meal if you wanted to.
    Or... boil them for a stock along with some mirepoix and fresh herbs... make a soup...

    lol I DID make two kilos, they were on sale and short expiry, so time limit was more of a factor.
  • If I have leftovers I just pop them back in the oven to reheat them for another meal. They don't get that "leftover" taste and flabby skin that microwaving gives them. It only takes about five minutes to heat them through at 400 degrees.

    My fiance bakes his wings the best. I try to follow what he does cause mines tend to turn out rubbery at times. His secret is drying the wings before seasoning them w/garlic &/or onion powder, grease the baking pan w/evoo & lightly season w/seaoning of choice). Melt unsalted butter & add 1tsp evoo w/Mortons Nature's seaoning (about 1/8-1/2 tsp depending on amount of wings) in a separate bowl and baste wings periodically until desied crispyness on skin. If you have a baking rack it's possible to get it crispy all the way around.
  • I cook them in the oven on slow heat, then finish them off with a butane flame thrower.
