Personally, I would try a blend of different cheeses. While I do like cheddar, too much cheddar tends to have quite the oil development (BLEH!)... I like a good blend of parmesan, fontina, provolone and aged asiago... mmmmmmmm

That recipe looks AWESOME.. I mean hell - its got bacon!

I made a variation of this that had chopped pickles and no cauliflower or egg. I really like it, the boyfriend just thought it was just ok.

I also mixed a little yellow mustard into the meat to give it some tang.

I will try this. I have made a similar one with potatoes for years, never have thought about swapping for cauliflower.

I think I'll try both versions - they both sound yummy. Kinda a low carb cheesy shepherd's pie

Exactly what I was thinking. Throw in some more veggies, put the cauliflower on top and Bob's your uncle. Just the thing for the coming cold winter nights.
  • This sounds super yum! May need to try this out tonight!!

  • I might make this in individual serving dishes to freeze. Would be a great warm lunch! Definitely going to add mustard and pickles though!
