Baking for friends who are not primal/paleo/wheat-free

Hello all. I recently decided to go wheat-free to see if it helps with major digestive issues I have (after two weeks, so far so good).

Anyways, on Thursday mornings, my lab has meetings and we rotate bringing breakfast or a treat in each week. We just started these meetings last week and of course my boss brought in bagels (I made sure to bring my own breakfast). I am curious as to what recipes for breakfast treats (muffins, coffee cake, etc.) anyone here has tried and gotten approval from friends who are not primal or wheat-free.

I don't want to buy everyone bagels and then sit and eat my hard-boiled eggs like I have to every other week so I am hoping to bake something EVERYONE can enjoy. I don't want them to hate it but feel obligated to eat it, so I'd like some ideas people have tried and KNOW are yummy!!

    I haven't actually tried these as I always have breakfast at home but I have seen many great ideas for on the go breakfasts. My faves are mini fritata in a muffin pan, and bacon and eggs in the muffin pan - you line the pan with bacon, add the egg and some herbs and have bacon and eggs to go.

    What about a fresh fruit tray? And maybe yogurt if you eat that. Perhaps some chopped nuts, coconut flakes for topping?

    Fruit is always a yummy option!

    I just worry that since everyone is getting used to people bringing bagels and such, that I will be the debbie-downer that brings fruit because I can't eat wheat, haha.

    I was thinking more along the lines of treating myself on this Thursday (once a month when I bring the treat, all of the other Thursdays I will stick to my hard-boiled eggs, fruit, etc.) and bake something that I can indulge in as well as everyone else. I saw a recipe for pumpkin muffins made with almond flour that I might try beforehand and see if they are tasty or not :smile:

    Egg omelette muffins. (simply bake scrambled eggs with some veggies in a muffin tin)
    5 lbs of bacon!
    Some sliced fruit.

    I just made these pumpkin pancakes today. Not as fluffy, but they more than compensate in flavor!! so good especially with fall coming.

    Are lemon bars breakfasty? I made this recipe (http://civilizedcavemancooking.com/grain-free-goodies/lemon-bars/) and I thought they were good. My kids didn't agree but they are very picky. I haven't had much luck with paleo baked stuff otherwise.

    http://paleomg.com/ has a bunch of recipes that might work for you. Haven't tried any myself but they look good.

    meringues or a flour-less chocolate cake :) The best recipes are the one that do not employ flour to start with. You can do jellos with natural juices and fruit as well. You can bring cheesecakes without a crust.

    And you can go savory for baked bacon roses, mini appetizers like cucumber slices topped with goat cheese and lox, and... sky's the limit! Fritattas can be served cold as well, and make cool squares, particularly if you go all out with hot peppers and sun-dried tomatoes :)

    Whenever i dunno what to bring to a pot luck I bring shrimps with home made marinara

    I'd go for something in a crock pot -- those kind of recipes are always great for groups.

    Breakfast casserole (especially if you put shredded potatoes on the bottom) would be a really hearty breakfast and no one would miss the bread-- one of my coworkers did this, and she was Southern, not Paleo :P Everyone raved about it.
