Please take a look at my food diary (LOW CARB) and please offer some feedback as to what positive changes I can make. I know my sodium is high, that's obvious but as far as other things, please critique and give me some feedback. I am feeling frustrated and wondering if I could make some changes......

Maybe lower you calorie intake slightly? This helps me keep an eye on portion control.
My main thing would be that you don't seem to be getting many vegetables in? Is there any reason for this? Just some nice leafy veggies in a salad for lunch, just to make ou are getting enough fibre etc
Other than that will wait to see what the other suggest as I'm fairly new at this as well0 -
Also as you say your sodium is high, maybe you could try more natural / home made food and sauces?0

a few weeks ago I ended an almost 2 month stall. I up'd my calories and lost 7 lbs. I was eating around 1200-1400 calories a day and stopped losing. It was about the same time I started to exercise and and was still only eating 1200-1400 a day. Someone suggested up'ing calories by 300-400 (basically what I was exercising) and that 7 lbs came off within 2 weeks. I just thought with so much to lose, it would be easier to lose. Boy was I wrong! lol0 -
You do have things you can definitely improve if you want to see better results... and the number one thing you can do is to stop eating brand name, preproccessed foods.
Tyson, Jimmy Dean, Mama Lucia, Kraft, Ballpark, Safeway Farms - get rid of all of it! Its all nothing but processed, salt-lick foods.
To do a true low carb intake, one must rid theirselves of these foods as it isnt just the salt that's the problem, the fact they are 'created' in a plant in mass production. There are loads of chemicals and preservatives in these convenience foods that your body does not need.
I see you do use almond meal.... make your own homemade meatballs with it using fresh ground beef, nothing leaner than 80/20. Add some finely diced onion, pepper, eggs, parmesan to the mix.. Mix well by hand and form your own meatballs.
If you are going to have hot dogs, spring for the Nathan''s All Natural Beef.
If you are going to have sausage, grab some ground pork and a free recipe from the internet and learn to make your own ground sausage meat.
Steak should never come from a bag unless its a cryovac bag straight from the vendor/distributor who supplies a meat department. Grab a whole roast, carve it into anything you want (chops, steaks, tips, etc)...
You definitely need to eat alot more vegetables. Those contain the healthy variety of carbohydrates and its necessary for proper colon maintenance.
Your cravings for bad carbs do stem from your allowance of having soda/diet-soda...

Yeah I know I eat a lot of processed, prepackaged foods. I cook when I can but I work so much, hardly ever get two days off in a row so being in the kitchen all day is a huge challenge for me. Someone mentioned cooking lots of meals in one day but when I do have a day off, staying in the kitchen is the last thing I want to do and sometimes i have so much to do (errands, part time job) I just don't have the time. The veggies and fruits were low due to very low carb restrictions I had on myself ( 30g or less)
I know I need to be more mindful of what I am eating, that's why I asked for the suggestions and advice. You guys know what I should be doing and I will start being more mindful of the foods I am buying. Maybe get my husband to help more since I am up'ing my carb intake.
So I will finish with the foods I have in my freezer and pantry and then next week try to aim for more fresh foods.

Just like exercise, you have to make the time happen to actually cook real foods, shop for real foods, etc. You cant let work be an excuse.
I work 50hrs per week, each day is a total of an hour commute if Im lucky. I have two music practices per week. I am about to finally start back up at the gym and it will be for one hour per day. I also do side work to keep my culinary background up and running... I know what busy is... but I still make the time happen to cook 100% scratch....
You ***need*** to make it happen.
And - YES... your husband SHOULD be pitching in! Ill come over there and boot him in the hiney to get his rear in gear!
Crock pot... is a woman AND man's best friend. Set it up before you leave for work on the low setting. It cooks all day long and VOILA - dinner is ready to be served when you get home.
Now lady - No more excuses!!!! 8-D0 -

Aww my husband is a wonderful man!! He does a lot, he just isn't much for cooking. He is not from the US so our way of cooking is foreign to him. He eats a lot of fish, I absolutely despise fish!! He helps in all other ways, cleaning, laundry, doing dishes, etc.
I will start looking for more recipes and yes, I do agree I need to invest in a crock pot. My hours are crazy, I work either 3p-3a, 5p-2a, 7-p-4a or 7p-7a.... either way it's ALWAYS evenings/nights. He works days when I am home. I also work for a wedding vendor part time and my weekends off work are busy with rehearsals and weddings ALL day on Saturdays. I usually work Suns. No excuses, just haven't found time to work it all in.
I would cook when I get home but we share with a friend and her dogs bark constantly when they hear me come in at night, waking her up. I have tried making something when I get home (like normal people wanna eat when they get home) and I always wake the dogs so I just started keeping peanut butter and nuts in my room to snack on if I want something.
Once we move out things will be much easier! I will have free reign to do whatever, anytime of the night. I promise, it's not excuses and I WILL work on it0 -
Any reason you cant try new things with fresh seafood? Its one of the best sources of Omega 3s/6s and vital for women's health. Natural source of fat, healthy minerals...
What nationality is your husband? Id be willing to bet there are a whole list of recipes in his culture that you could be taking advantage of.
Also - no reason why your husband cant learn to cook too.... free cooking lessons are found on youtube.com (epicurious, video jug)...0 -

My husband is from the Caribbean, he eats a lot of fish, plantain (which I also do not like) and rice. He also eats a lot of potatoes and yucca root (which I do love but is very starchy). He also eats things like liver, hearts, etc which I do not like either.
I am originally from the south (Texas & Louisiana) so I grew up on potatoes, lots of meat. Lots and lots of mexican foods, rice, tortillas, BBQ and other kinds of southern foods (soul foods) as well. My family is a mixture of creole, spanish and irish (but that seem to be left out in our cooking) lol I just could never stomach fish!0 -

WHOA... from the south??? And you dont eat catfish? crawfish? Shrimp? My GAWD woman you need seriously culinary help! You are missing out on the REAL foods of the south!!!!!!!!!!!!!! ***about to faint at the thought!!!!!!
I hear you about plantains: Id rather throw a fast ball with them to see how big a hole I can make in the wall or window! LOL!!!!
Woman - you need someone to show you the proper way of purchasing real seafood (it should never smell if its truly fresh), and show you the proper cooking methods, techniques of working with it, cooking methods, sauces, braises, etc. You truly have not lived until you have had real fresh smoked salmon using hickory, apple and cherry wood.... its sexy, full of flavor and DAMNIT that crispy skin just tastes so DAYUM GOOD...

I make my own spice rubs and blends for when I BBQ or smoke. I also make my own sauces as well (my Endo regularly grabs recipe ideas from me! LOL)... I brought in some Brisket and Pulled Smoked Pork to work for everyone to try and they all were at my MERCY! BWAHAHAHAHAHAHAAHAHAH.... I was able to even get one of our extremely picky ladies to try and she just died right there at the table - she never knew pulled pork could be so good.... (another food virgin Im breaking in! LOL!)
There is hope - I know it... you....will......get......there..... even if I have to chain you to the wall! LOL!!!!!0 -
LOL everyone says that!! They say "you cant possibly be from the south" but yes, I am a southerner who hates, no despises fish and seafood!! Everyone in my family LOVESSSSS it, except me, esp my creole counterparts! lol
And yes, I will be working on finding better things. Of course this weekend I have been off plan completely, am rather enjoying it though. My husband begged me to make some chicken and dumplings to welcome to colder weather so I made up a pot. I work until 5am tonight/this morning and then back to tomorrow 3p-3a so no time to cook. Boss is saying I should be having 3 weekends off a month soon - we just dont know HOW soon!! That will be like a mini vaca ...0
