Made this recipe today from the cookbook. Turned out great.

I didn't use the okra (substituted zuchinni instead), and I left out celery (hate the taste).

Used 1/2 head of cabbage.

Added 8 oz of water as it was too thick for me.

Added herbs de provence as well.

Makes 4 servings. With added water will get 6.

Chicken-Vegetable Soup
 
This is a water-based soup, which offers a lot of weight-control benefits, such as helping to control hunger, reducing total calorie intake when eaten before or with a meal, and filling you up. It’s also a good source of nutrients you might fall short of.
 
INGREDIENTS
 
1 ½ cups chopped cabbage        
1 large carrot, chopped        
1 cup sliced okra        
1 large onion, chopped        
2 large celery stalks with leaves, chopped        
1 can (15 ounces) crushed tomatoes        
1 can (14 ounces) fat-free chicken broth        
1 ½ teaspoons salt        
¼ teaspoon pepper        
4 baked boneless, skinless chicken breasts, diced
 
DIRECTIONS        
1. Place all ingredients except chicken in a large pan and simmer for 1 hour, or until vegetables are soft.        
2. Add chicken and heat thoroughly. YIELD: 4 servings

    I made this soup on Saturday, and it was delicious. I used asparagus instead of okra, and I too used extra water. For herbs, I used Italian seasoning and garlic as well as salt and pepper, and have changed to sea salt instead of table salt. It really is delicious and works so well on this diet!

    Hi Ladies. I made the soup as well (I used okra). I love the soup, but I'm a little tired of it. I just can't eat it every day. I think I am going to freeze the rest for another time.

    Any other recipes that are just really great?
