The other banana cookie led me to this recipe.
    Makes 30 for 56 calories each 2.4 g fat
    Ingredients

    3 ripe bananas
    2 cups rolled oats
1 cup dates, pitted and chopped
    1/3 cup vegetable oil
    1 teaspoon vanilla extract
    Directions

    Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes in the preheated oven, or until lightly brown.

    Tim’s Terrific Vegan Pumpkin Pie

  • Ok I have to share this awesome recipe that I got from Dr. Fuhrman's "Eat to Live". It's delicious, easy to make, and is great for dessert, a snack, or even breakfast!

    Yummy Banana-Oat Bars

2 cups quick-cooking rolled oats (not instant) (I just used old-fashioned quaker oats)
    1/2 cup shredded coconut
1/2 cup raisins or chopped dates
    1/4 cup chopped walnuts
    2 large, ripe bananas, mashed
1/4 cup unsweetened applesauce (optional; see note)
1 tablespoon date sugar (optional; see note)

Preheat oven to 350. Mix all ingredients in a large bowl until well combined (mash the bananas first). Press into a 9-by-9-inch baking pan and bake for 30 minutes. Cool on a wire rack. When cool, cut into squares or bars. Note: Add the applesauce and date sugar for sweeter, moister bars. I also like to add cinnamon!

If cut into 12 pieces (without applesauce or date sugar):

    1 piece=
