I love mustard. Sometimes I eat it off the spoon......... >.<
Now not all mustards are Paleo but I do have a few which are just fine! Problem is, I don't know what to eat them with. I used to like it on a sandwich or crackers, but that is no longer an option for me...
Any suggestions? Is it good on celery.....?

Tuna salad.
You could put it on chicken.

I like it on some good chicken or polish style sausages (filler and nitrate free of course), I mix it into salad dressing, I always put it in my tuna, brush some on some chicken breasts and coat with parmesan (if you do cheese) or some dried dill and bake. I also sometimes just dip meat into it for a snack. I love mustard0

Deviled eggs. I'm kind of obsessed with them lately, and there are so many ways to make them. For every two whole eggs, I use a tablespoon of homemade mayo and about 1/2 teaspoon of mustard. But you could up the mustard amount as much as you like (I know people who like to skip the mayo altogether, and just use tons of mustard).0

One of my go to snacks is nitrate-free lunch meat dipped in mustard. I also have a recipe for salmon cakes, which I also put mustard on.0

Goes great with a giant meatloaf. Good with breakfast sausage.0

Cover your beef steak in it before cooking, homemade mayonnaise made with macadamia oil (I use Olive), salad dressings made with lemon juice/oil/and garlic (YUM!), I add it to mashed cauliflower, there are many things!0
