This is a recipe that I have made on a few occasions. My kids love it! Paired with a side salad it is very filling!

    Crock Pot Chicken Chili

1 can black beans (drained and rinsed)
1 can whole kernel corn (undrained)
    1 can rotel (undrained)
    1 package ranch dressing mix
    1 tsp. cumin
    1 tsp. onion powder
1 8 oz. package light cream cheese
    2 boneless, skinless chicken breasts
    1/4 tsp. cayenne pepper
    1/2 tsp. garlic powder
    1/2 tsp. pepper
    1 cup diced onion
    1 tbsp. olive oil
    2 cloves minced garlic

In a large skillet, heat oil and cook onion for 8 minutes, then add garlic and cook for 1 more minute. Set your crock pot on low and lay chicken (both breasts, whole) on bottom. Add onion and garlic mixture, black beans, corn, rotel, all seasonings and ranch mix on top. Stir to mix those ingredients a little. Set brick of cream cheese on top and cover. Stir and shred chicken before serving. Great served with a side salad!

Makes about 6- 1 cup servings.

If you can't tell, I LOVE my slow cooker. Both my husband and I work full time and evenings can get a little hectic. Having a meal ready, or close to ready when we get home is a huge help for us! Enjoy!
