    One thing that Neil and I used to make was grilled portobello mushroom cap burgers. Clean the caps and marinate them briefly (maybe 20 min) in Italian dressing or other oil/vinegar/spices mix, then grill or lightly pan-fry (just a little oil on the pan to keep it from sticking).

    I have to get over my mushroom issues. I actually like the taste of them, they just have a longstanding squick factor that I haven't gotten past - I blame my early childhood experiences with pastureland. :-)

    I would do a non-vegan version with an egg instead of chia seeds, because I'm trying to make the conversion without buying too many specialty items (wheat germ, special flour, TVP or soy products, random one-recipe purchases).
