Chicken Bones

Im a horrible cook, that much I know, and I love simple stuff and dont have any fancy equipment or spices at my hand. However for lunches instead of eating chicken breast or deli bought cold meat Im gonna start cooking a whole chicken sundays and then put it in a tupperware in my fridge and eat during the week. I have a few questions.
How would you make the chicken (yes im that bad a cook)?
How long would you keep the meat?
What to do with the chicken bones? I dont want anything to go to waste!
And should I eat the skin of the chicken as that's the my favourite bit?

Also once I removed most the meat should I just use whatever is left? Because obviously there would be bones, fatty stuff and lots of random things left or is it certain types of bones you can reuse?0

Check out this link if you want a "pulled chicken" type recipe. I don't have a pressure cooker so I used the stock pot method to cook it.

Save the leftover bones, meat, skin, etc. in a ziploc baggie in the freezer and when you have enough saved - make bone broth in your slow cooker!

Once you make the chicken, take all the meat off the bones and do whatever you want to do with it. Then take everything left over and put it back into the slow cooker and make broth! Then you're not wasting anything. I usually just throw the leftover chicken peices, celery, carrots, onion, salt/pepper and parsley into the slow cooker and cover the bones with water, then cook overnight.

Hi! Might I recommend a basic cookbook to you? These are two staples of the cookbook world and have easy to follow recipes for basic things like roasting chickens, making beef roasts etc. Just handy to have around for when you see that great sale on a hunk of meat but aren't quiiiiiite sure what to do with it when you get it home.
These are NOT paleo/primal specific. But they do address the basics VERY well.

My fave way to cook chicken is to slow roast it. See this recipe

I usually make 2 at a time because that is how I buy the chickens.
You can make chicken broth on the stove top in a regular pot. Just simmer for awhile. You can google for specifics. Pressure cooker can be used too.0 -

Yep, for sure. Just use a big pot with a lid on the stove and simmer it for the day.0
