for creamy cheese sauces you can add pureed carrots or butternut, acorn, or winter squash in the place of the butter and cream to get that yummy silky texture and it adds a serving of veggies :D just cook them till soft and puree using a bleder or food processer and use in place of if you make to much you can always make puree ice cubes and bag them when frozen to add to stuff later

for white sauces you can roast onions, leeks and garlic and puree them to replace the butter and cream or milk. These also can be frozen in ice trays for later use if you make to much.

read in a magizine that doing this can make you eat less and help you loose 17+ pounds a year plus you get an extra serve of veggies. How great is that?
