Quinoa

Anyone eating quinoa? How are you preparing it? A friend recommended this as a good low carb, gluten free food.

    I cook it like rice, then eat it for breakfast as a hot "cereal", with almond milk and strawberries.

    I'm also a fan of a cold quinoa salad, especially in the summer!

    I cook it in my rice cooker. When it's done, I make a salad out of it with: pecans or sunflower seeds, sliced olives, drained marinated artichoke hearts, cherry tomatoes, and a little red onion. Basically, I root around in my veggie drawers and find what looks good to throw in. It changes according to the time of year, but I usually have at least those ingredients in it.

    I make a dressing for it with some olive oil, balsamic vinegar, pinch salt/pepper, fat pinch sugar, and a squeeze of mustard, whisking all of that together. Then I toss it all together...mmm.mmm. This is an easy lunch to pack for work, I just add some fruit and I'm set!

    I thought quinoa was going to be the answer, but it turned out that I reacted to it like it was gluten. Darn.

    Yes!!! My favorite rice replacement, use it as you would rice. Also buger wheat is awsome, just made my favorite meditarian salad with both!

    With water or veggie broth as the liquid and use it like a rice or pasta side. Or half water and half almond milk for a breakfast type meal. I add fruit and agave and sometimes nuts just like you would with an oatmeal or a cream of wheat type meal.
