Whole Foods coconut milk

I bought two cans last week because I was going to make coconut whipped cream this past weekend for a gluten free cake I made. I stuck the cans in the fridge for a couple days prior in order to thicken the cream. But when I opened the can I was disappointed to see that the cream did not thicken up and separate from the liquid. I was able to make the whipped cream by adding arrowroot powder to it and beating the heck out of it. I have had success using other brands of coconut milk. I wonder why certain brands don't thicken up. This was more of a FYI than a rant.

  • Cool! I never imagined whipping coconut milk. I really need to look into more creative ways to use this stuff.

    Yes, it really is a great alternative to regular whipped cream!
