Office potluck arghhh

My group is planning a potluck and in looking at the list there's not one dish that I would/could eat. I usually don't participate in these sort of things, and don't want to mention that I'm low carbing (for obvious reasons). Any suggestions on what I should bring?

  • Can you at least take something that YOU can eat, and join in with the fellowship?

    I remember my first week of doing Atkins the last time, my in-laws invited us over for Pizza. So I mixed up a nice tuna salad and some veggies, took them along with me, and had a great (and low-carb) time. It worked, and I got some really nice family time.

    Another time we had a potluck at my work, I made and took a crustless quiche to share, and then made some other appropriate veggies for myself. Worked like a charm (and, everyone LOVED the quiche!!).

    Just some thoughts, hope they're a little bit helpful.

    Thanks Tom, it would definitely be something I could eat, which would probably be the only thing. I like the quiche idea because i dont want to bring the typical salad, i was looking for more of a tasty finger food.

    Low carb coleslaw is a good side/carry in thing to make (cabbage, mayo, vinegar, splenda, spices, tiny bit of carrot if you'd like)

    Cucumber sandwhiches are good finger foods. Use slices of cucumbers with no carb deli meat and cheese or mix some herbs in cream cheese to spread on them.

    Meat and cheese trays. My grocery has a Hormel premade platter with no carb deli meats and cheeses, or obviously craft your own.

    Deviled eggs. I use real mayo, finely diced onion, and a tad of mustard in my yolks. I also add a tad of splenda (we like ours sweet where I'm from).

    Hope this helps spur some ideas for your carry-in!!
