I will add some recipes here .Please feel free to add your own as well. This will take the guess work out of what to eat!

    This turned out amazing and was featured on Dr. Oz. Secrets to Longevity Episode. I Personally add 1 lb of ground turkey between the vegetables and sweet potatos for extra protein. But that is up to you!!


    Vegetarian Shepherd’s Pie with Mashed Sweet Potato Topping



    Ingredients

    Makes 4 to 5 servings



    2 tbsp olive oil plus a little more for greasing baking dish

    1 red onion, chopped

    10 oz button mushrooms, chopped

    2 cloves garlic, finely chopped

    1 cup chopped celery stalks

    1 cup chopped carrots

    1 (14.5- or 15-oz) can diced tomatoes, not drained

    2 tsp oregano

    1 cup frozen peas

    1 cup frozen corn kernels

    3 soy or garden burgers, crumbled

    1/2 cup chopped parsley

    Freshly ground pepper

    Pinch of salt or more to taste



    Topping

    4 sweet potatoes, cooked and peeled

    1/2 cup coconut (not the canned kind but the one in your dairy aisle) or rice milk

    Pinch of salt

    Pinch of nutmeg

    Pinch of cayenne



    Preheat oven to 400°F degrees. Lightly grease a 2-quart baking dish. Mash the sweet potatoes with the coconut milk, salt, nutmeg and cayenne until smooth. Set aside.



    In a large pan heat the oil and sauté the onion on medium temperature until softened, about 5 minutes. Add the mushrooms to the pan, raise the heat and cook most of the moisture from the mushrooms has evaporated and they begin to brown. (The length of time depends on the freshness of your mushrooms.) Stir in the garlic and cook about 30 seconds. Remove content of the pan to a bowl and set aside.



    Add a little more oil to the pan if necessary and cook the celery and carrots until softened, stir in the tomatoes and their juices and cook until juices have reduced by about half. Add the mushroom-onion mix back into the pan, stir in the oregano, salt and pepper as well as the frozen peas, corn, crumbled burgers and parsley. Transfer all to the baking dish.



    Top with the mashed sweet potatoes and bake for 20 to 25 minutes, until hot and bubbly.

    Cajun Lime Tilapia - This is what I'm making tonight with Garlic CousCous!

    1 Can whole kernel corn (15 oz.), drained


    1 Can black beans (15 oz.), rinsed and drained


    4 green onions (white part only), chopped


    1/4 Cup chopped fresh cilantro


    2 Tablespoon fresh lime juice


    1/2 Teaspoon Cajun seasoning, plus


    1 ½ teaspoons for salad


    4 Tilapia fillets (6 oz. each)


    1 Tablespoon olive oil


    Directions

    1. To make the corn and black bean salad: place corn in a large serving bowl. Stir in black beans, green onions, cilantro, limejuice and 1 1/2 teaspoons Cajun seasoning; set aside.
    2. Brush fish on both sides with oil and sprinkle with remaining 2 tablespoons Cajun seasoning. Heat a Nonstick Skillet over Medium High Heat for 1 minute. Sear the Tilapia for 3 to 4 minutes on each side or until fish flakes with a fork. Serve fish with corn and Black Bean Salad. Garnish with cilantro leaves and lime wedges, if desired.

    My Breakfast is some version of this each and every day with BLACK COFFEE

    1 cup unsweetened almond milk
    1 cup fruit of choice
    1-2 cups spinach
    1 tbsp ground flax
    1 banana
    1/2 cup carrots
    Add Cinnamon and Ginger to taste they will help with hunger and blood sugar stability.

    BLEND UNTIL SMOOTH enjoy daily for breakfast can swap different fruits daily and different leafy greens. (Kale romaine etc.)

    The shake is 270, The tilapia is 300 with 1/2 cup of grains like rice or couscous added, the Vege Shep Pie is 400 per 4x4 inch piece, and 500 with the turkey added.
  • Oh the Cajun Lime Tilapia sounds really tasty
    my favourit recipe is my homemade tzatziki:) its for 2 person
    -1 big cucumber
    -1 yoghurt (250g)
    -lemon ( 1 coffe spoon)
    -1 tablespoon olive oil
    -sea salt
    -black pepper
    -garlic (one or two clove)

    all mixed together and left in the fridge for 4 hours
