I watched the video - she looks amazing. I think converting entirely is going to be hard for me. I am going to do it but it may take me a bit. I have already started making changes I just never realized how much I eat that is not plant based. For instance cheese, yogurt, cottage cheese etc. these are my go to snacks.0

I hear you - cheese is a favorite food and as of yet, I have found no real replacement other then a tofu ricotta cheese recipe in Happy Herbivore that made my lasagna and the leftovers taste spot on like real cheese.
It can be challenging but the palate will change - my craving for it is less - like only if I am making something for the kids with cheese does my brain think to want it.
Mainly I find I am craving the good stuff - mushrooms is a biggie...................if you need help or recommendations on things to swap out for other things, let me know!
