buckwheat pancakes

I tried this recipe this morning, and with maple syrup, it was not as bitter as other buckwheat pancakes I've tried to make. Next time I will add a cup of blueberries, scattering the berries over the pancakes as soon as they have been poured out.

1 cup buckwheat
2 tsp baking powder
3 tbsp brown sugar
1/2 tsp salt

Mix dry ingredients together. Add

3 egg yolks
2 tsp vanilla
2/3 cup milk
1/2 cup Greek yogurt

Mix batter. Whip up egg whites until they form peaks, fold into the batter. Pour out onto griddle. Makes 8 pancakes. Sprinkle blueberries on top.

Serve with Maple syrup.

Serves 4.

If there are better recipes out there, I sure would like to see them.

    I have a recipe for almond flour pancakes that are also gluten free and REALLY good! They are NOT low in calorie but will fill you up all day.

    Yummy! I'm bumping this for later...new to the GF lifestyle, and am looking for GF alternatives to foods that I LOVE!!!

    I would also like the almond flour recipe, because I :heart: pancakes. I eat them almost every weekend for breakfast! :bigsmile:

    These ones are vegan:

    1/2 cup buckwheat, freshly finely ground OR buckwheat flour
    1 - 2 tblsp potato starch or arrowroot
    pinch sea salt
    1/2 tsp bi-carb / baking soda
    1/4 tsp cream of tarter
    1/2 tsp vinegar (apple cider vinegar is best) or lemon juice
    1 tsp or splash of olive oil
    water

    I have subbed applesauce and made them with no oil too.

    will have to try these as have tried a few vegan/gf pancakes and they were awful.

    Oh my Gosh! I was at this pancake house yesterday and they had the BEST buckwheat pancakes! They were delish--hearty but still fluffy at the same time, and they had a little spice to them...something similar to a pumpkin pie-type spice or something. Maybe nutmeg with a hint of cinnamon???

    Oh...they were so good! Anyhoo, I bet this recipe would be great with a little bit of those spices mixed in, too. I think I'm going to try that for breakfast one day this weekend...geez, now I'm salivating just thinking of those darn pancakes again. Nom nom nom...:bigsmile:

    Adding spice is a good idea. Most buckwheat pancakes mix the buckwheat flour with whole wheat flour, just to cut the bitterness. Making the pancake using only buckwheat flour is the real challenge.
