Almond Flour Pancakes - Gluten Free AND Low Carb

This is not my recipe, I did a random search and found them online but I didn't save the link so I can't give credit to the owner.

Anyway, these are really good and you can use these as a base and add berries or whatever you like. I have added pecans to mine, coconut flakes, blueberries, etc. They are HIGH in calorie (the almond flour is what does it) but they are VERY good and will fill you up all morning long. This recipe makes about 3 - 5" pancakes. I have doubled it for the family with no issues. Enjoy!


Almond Flour - 1/2 cup
Coconut Oil - 1 Tbsp (melted so that it is liquid) - You don't HAVE to use coconut oil but it adds great flavor!
Artificial Sweetener (granulated works best) - 2 tsp
Large Egg (Whole) - 1 egg
Water - 1/8 cup (maybe a little more, add as much as you need to get a regular pancake batter consistency. Should be thick but easily pourable and you can adjust this for the thickness that you want)
*I use some type of sparkling water (it can be flavored) and it makes the pancakes very light and fluffy. Regular water is fine, they will just be a little more dense*

Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little coconut oil. The only real difference is that they won't "bubble" on top the same way regular pancakes do. Flip them when the underside is brown.

These are about 155 cals per pancake, 3 carbs (1 NET carb), 2 fiber, and 6 grams of protein. I know, I know... they are HIGH in calorie but they are good and filling! Top with sugar free syrup, strawberries, sugar free jam or preserves (my fave), etc.

    I made gluten free pancakes this morning. I based mines on www.yourlighterside.com w/a few revisions.
    I used:
    1 egg
    1 tbsp cream cheese (optional)
    1 tbsp coconut flour
    1 tsp almond flour
    1 tsp tapioca flour (optional)
    1 tbsp Jay Robb Vanilla egg protein powder
    1 1/4 tsp Vanilla extract
    1 tbsp coconut sugar
    10 drops of NuNaturals liquid stevia
    dash nutmeg
    dash cinnamon
    1 tsp unsweetend coconut milk

    I blended mines in my blender let it set for a few minutes, heated my non-stick pan & voila I get 2 med sized pancakes.
    After buttering them I used 2 Tbsp of Blackberry Patch sugar free syrup (not sure if this os gluten free though sorry)

    Sounds delicious! Pancakes are one of the things that you don't have to miss on a gluten free diet.
