Mediterranean Flatbread Pizza (No meat)

Filling and flavorful for 325 calories; ideal for evening meal.
1 flatbread (Flat Out brand, healthy grain with flax, 100 cal)
3 T roasted garlic hummus (Sabra brand, 105 cal)
1/3 C mozzarella cheese (low-moisture, part-skim, 80 cal)
1/2 C baby spinach (5 cal)
1 med. Roma tomato (35 cal)
1 tsp dried oregano or Italian seasoning
1 tsp garlic salt
Set oven to broil on high and grease a thin pan such as a cookie sheet with cooking spray. While oven is heating, slice tomatoes into quarter-inch slices and place in greased skillet on medium-high heat. Add 1/2 tsp dried oregano and 1/2 tsp garlic. While tomatoes are cooking, rinse spinach and chop if desired. Set aside. Allow tomatoes to cook until the centers are no longer bubbling.
Place flatbread on greased cookie sheet and broil for 2-3 minutes or until edges are browned. Remove from oven and turn setting to bake at 375 degrees. Spread hummus over flatbread. Add sauteed tomatoes, fresh spinach, and remaining garlic and oregano. Top with cheese and bake in oven for 5-7 minutes or until cheese is melted.
Slice with pizza cutter and serve.
Tip: For a snack, you can also broil a flatbread and slice into small pieces to use for dipping in hummus.
