GF Enchiladas

Put this up in the regular recipes forum, and no one seemed interested. Maybe you guys will enjoy it ;-)

I came up with this recipe, and they are AMAZING! Thought I needed to share!!

4 cups Baby Spinach
1 lb of Baby Bella's
2 small cans Ortega Green Chilies
8 oz Queso Blanco
2 small cans Old El Pasa - Green Enchilada Sauce (Edited by mod: Not GF, looking for GF alternatives, if you have some please post below!)
10 small White Corn Tortillas (the white are softer and won't break as easy)

OK
In a Medium sauce pan saute mushrooms
When almost done, toss in spinach to wilt a little (You can also food process or chop the spinach smaller)
Remove from heat, add Green chilies
Take 1 tortilla at a time, add a spoonful of filling, and some of the Queso
Roll up tortilla and place in glass baking dish, split side down to keep tortillas rolled
When all tortillas are filled, top with both cans of sauce
Top with remaining Queso
Bake for 15 minutes or until bubbly at 375 degrees

Calorie count is 199 per enchilada

After I made this, I thought of maybe adding artichokes, but have not yet tried that. Let me know if you try this, and if you LOVE it as much as I did!!

    Old El Paso Green enchilada sauce is not gluten free or I would totally be over this. Have had trouble finding GF green enchilada sauce. I thought i saw some at Whole Foods but have yet to try it... Thanks!
