Shabbat Salad Recipe Challenge

Please! I am getting desperate for some salad ideas for shabbos that are low calorie/fat - that AREN'T a stam green salad.

Please give me some of your favorite salad recipes:

My go to salads the last two weeks:

Good, ripe fresh Tomato, sliced thin
crushed garlic
fresh basil chopped
EVOO
white vinegar
salt/pepper to taste
marinate for best flavor

white cabbage or nappa cabbage
sliced baby corn
slivered almonds
black gomasio
toasted sesame oil
brown rice vinegar
sliced scallions if you have

    hearts of palm salad:

    cut hearts of palm
    grape tomaoes
    red onion

    Dressing:

    hearts of palm juice (costco hearts of palm is the best)
    garlic

    Easy AND lo call!!

    Cucumber salad:

    Cut up cucumbers
    Red onion

    Dressing:
    Vinegar and stevia

    Roasted Eggplant

    Roast eggplant as you would for baba ganoush. Add fresh tomato and red onion, finely chopped.

    Season with fresh garlic, olive oil and salt.

    Here is the best part of this recipe, my husband gets the heebie jeebies from the sight of eggplant and I have one kid that baba ganoush is the only thing he eats at the first course, so I roast a case of eggplants at once. Then I put it through the food processor (on pulse because if the seeds are pureed it will be bitter). I put it snack sized zip locks and freeze it. I use one bag for the kids and one for the above recipe. Then it lasts us about 3 months.

    Also, when I freeze it, I separate each bag with parchment paper so the bags don't stick together.

    You roast the eggplants with skin on or already peeled? You need to give me explicit directions... We could do this also...

    Man, I wish I wasn't traveling so I could get you an awesome quinoa salad recipe. But basically I remember that it had black quinoa, chopped avocado, corn kernels, maybe chopped red pepper?, and lemon juice.

    I haven't seen black quinoa yet - only red. Are we talking about the same thing?

    No, they're different kinds. You could probably try it with red, though. I don't actually like quinoa (though I like this salad), so I couldn't tell you if it works.

    You roast the eggplants whole until they are limp. 450 for awhile....I dunno how long, I get busy.

    Bob's Red Mill has a lot of interesting salads. I am not big on salads. I am happy to eat the same green salad every day. I've been putting sprouts that I grew on them. It is so cool.

    Do you like beans? I have an interesting way to make them that is super duper fast.

    I like to make spinach salad.

    Fresh spinach leaves
    Red wine vinegar
    Craisins
    Raw pecans (optional)
    Tiny bit of raspberry preserves

    My husband hates spinach, but he likes this salad.

    What about shredding some fake crab and adding that to a boring green salad? You probably need a little mayo but not much.

    I'm completely obsessed with argulua, and it's even more amazing if you chop it up before putting it in the salad bowl.

    A Shabbos salad that I like (I chop everything up really small, to make this into a kind of fancy Israeli salad - it always get TONS of complements):

    Chopped arugula
    Chopped parsley
    Red bell pepper
    Tomatoes
    Cucumbers
    Pomegranate seeds
    Sunflower seeds
    Dressing: Lemon juice, olive oil


    Or, another option:

    Chopped arugula
    Tomato
    Mango
    Chopped walnuts
    Chopped chicken breast
    Dressing: Olive oil, honey mustard, honey, apple cider vinegar


    Another salad I make a lot is a bean salad, people LOVE this, though the avocado makes it higher calorie:

    2 cans black beans
    1 can corn
    Red bell pepper
    Tomato
    Avocado
    Scallions, sliced into thin rounds
    Dressing: olive oil, chopped garlic, squeezed lime juice, cayenne pepper

    I have one that I use:

    chopped carrots
    dried cranberries
    dried or fresh mint
    a little OJ

    leave overnight in the fridge for the flavors to mix.

    I'm editing to add another:

    chopped tomatoes
    dried or fresh mint
    a drizzle of oil if using dried mint
