I just discovered this one the other day, I normally make a ton(like 12 servings worth).
Its really simple: chop up about 2 tomatoes, 1 onion, 1/2 green pepper, 1 yellow pepper, 1/2 orange pepper, 1/2 a jalepaneo. Then add1/2 cup lime juice, 1/4 cup(or less) olive oil(or coconut oil), 1tsp red peppers,1/2 tsp salt, 1/4 tsp pepper. Add a can of rinsed and drained black beans. This can be storedinthe fridge in aclosed container, the flavor seems to get better with a little time soaking up the ingredients. On each individual serving add 1/4-1/2 diced avocado.0 -
That sounds amazing! I might double up on the jalapeno too - sounds like a great stand by to keep in the fridge for the times I don't feel like making healthy stuff. Thanks!0

SWEET CORN AND BLACK BEAN SALAD
Serves 6
Simple to prepare, colorful and flavorful, this salad combines fresh sweet corn, tender black beans, crisp red peppers and zesty cilantro in a simple rice vinegar dressing.
Ingredients
2 cups fresh or frozen corn kernels
1/2 cup finely chopped red onion
4 tablespoons seasoned rice vinegar
1 tablespoon extra-virgin olive oil
3 tablespoon lime juice
1/4 teaspoon sea salt
1/2 teaspoon ground black pepper
2 cups canned black beans rinsed & drained
1 red bell pepper, cored, seeded and chopped
1/2 cup cilantro leaves, finely chopped
Mix all together, cover & refrigerate, DELICIOUS !
Calories 225 per serving (about 1 1/2 cups) Carbs 40 Fat 5 Protein 10 Fiber 90 -
